How To Make Simple Eel Fried Rice (Include Unagi Fried Rice)

Maybe most of you will confuse with the Eel Fried Rice and Unagi Fried Rice. But they are the same eel but live in different water. Unagi is the fresh-water eel. So if you have learned how to make ell fried rice, you will also know how to the other one.

How To Make Eel Fried Rice

Step 1: Prepare Cold Rice

Firstly, we should prepare in advance 200g cold rice for the cook. We must use cold rice, not hot rice. Because the hot rice is very easy to stick together.

Step 2: Separate 2 Eggs

Second, we should prepare 2 eggs. Use the egg separator to separate the eggs. We don’t need to separate them very thoroughly. Just roughly separate them is good.

Step 3: Dice 1/4 Onion

Next, we can dice an onion. Firstly, make a couple of horizontal cuts to the half onion. Then make a couple of vertical cuts to the onion. Finally, dice onion with its grain. 1/4 onion is enough for the rice. Then save it for later.

Step 4: Dice 1/4 Carrot

After diced the onion, we should dice the carrot. Firstly, we should deeply score vertically the carrot with a homogeneous crosswise knife. Then dice it from the small side. 1/4 carrot is enough for the rice. Then save it for later.

Step 5: Chop Green Onion

Now we prepare some green onion for the rice. Chop 1 bunch of green onion, then save it for later.

Step 6: Chop Roasted Eel

Next, we can chop 100g roasted eel. Roast eel is not an easy work if you don’t have a toaster oven. We recommend you buy roasted eel on the market. After we have the roasted eel, we should chop it. Please don’t chop it up too much. Just chop it into the size like our video.

Step 7: Fry Egg White

Before cook this rice, we still need to prepare the fried egg white. Firstly, add 1/2 tablespoon corn oil into the pan. Use the soft fire to heat the pan. Then add the egg white into the pan. Stir-fry until cooked. Then save it for later.

Step 8: Cook Eel Fried Rice

Now it’s our time to cook this rice. Firstly, add 1/2 tablespoon corn oil into the pan. Use the big fire to heat the pan. Then add egg yolk into the pan. Stir-fry until cooked. Then add diced onion and diced carrot into the pan. Stir and fry them until fragrant. Then add cold rice into the pan. Fry it few times. Then add fried egg white and chopped roasted eel into the pan. Stir them evenly.

Finally, add 1/4 teaspoon salt, 1/4 teaspoon light soy sauce, 1/8 teaspoon black pepper powder into the pan. Because the roasted eel has a stronger taste, don’t need to add too much salt and light soy sauce into the rice. Then turn the heat down and stir and cook it for approach singe. Add chopped green onion into the pan. Stir them evenly. Then we got the delicious eel fried rice.
