  • Firstly, we should prepare in advance 200g cold rice for the cook.
  • Second, we should prepare 2 eggs. Use the egg separator to separate the eggs.

  • Next, we can chop 100g roasted eel. Roast eel is not an easy work if you don't have a toaster oven. We recommend you buy roasted eel on the market. After we have the roasted eel, we should chop it.
  • Before cook this rice, we still need to prepare the fried egg white. Firstly, add 1/2 tablespoon corn oil into the pan. Use the soft fire to heat the pan. Then add the egg white into the pan. Stir-fry until cooked. Then save it for later.
  • Now it's our time to cook this rice. Firstly, add 1/2 tablespoon corn oil into the pan. Use the big fire to heat the pan. Then add egg yolk into the pan. Stir-fry until cooked. Then add diced onion and diced carrot into the pan. Stir and fry them until fragrant. Then add cold rice into the pan. Fry it few times. Then add fried egg white and chopped roasted eel into the pan. Stir them evenly. Finally, add 1/4 teaspoon salt, 1/4 teaspoon light soy sauce, 1/8 teaspoon black pepper powder into the pan. Because the roasted eel has a stronger taste, don't need to add too much salt and light soy sauce into the rice. Then turn the heat down and stir and cook it for approach singe. Add chopped green onion into the pan. Stir them evenly. Then we got the delicious eel fried rice.
