For Wonton
- 170 grams prawns, peeled. Can either be raw or cooked
- 170 grams minced pork
- 1 tablespoon soy sauce, low sodium
- 2 tablespoons sesame oil
- 2 tablespoons rice wine, or Shaoxing wine
- ½ tablespoon ginger, fresh and finely ground
- 1 packet, wonton wrappers
Broth
- 6 cups (1.4 liters chicken stock)
- Pinch of salt and pepper
- 1 large garlic clove
- 4 slices of fresh ginger,
- 1 scallion
Instructions
- Chop the shrimp to bite sized pieces and put them to a food processor alongside scallions, sesame oil, rice wine, ginger, pork and any other ingredients. Mix them until they combine properly.
- Lay some wonton covers on an even surface, and some water on a dish. To the covers, add a teaspoonful of mixture, and place on one of the edges for easy folding. Fold over the other side and press together to seal the filling. Remember to press out any air while you are sealing. Use a little water to join the filling covers. Repeat the process until all the wonton fillings are used up.
- Season the stock. That is done by adding a little salt to taste together with the ginger slices and garlic, scallions and white pepper. Top it off with sesame oil.
- Place the stock mixture on the wok and on a cooking stove set to medium heat settings. Heat it until it begins simmering. Set it aside.
- To another deeper wok, add some water and place it on a cooking stove, and bring the water to boil. Adjust the heat settings to medium, and dip a few wontons and let them cook for a few minutes. You will know that they are ready when they begin rising to the top, at which you remove from the boiling water with a slotted spoon. Repeat the process until all the wontons are ready.
- Strain the stock to remove the solid ingredients. Add this stock to the wontons in a bowl, and top it off with the scallions.

You can choose to preserve the wontons. However, you have to do this before they are cooked. If that is what you want to do, lay them on a baking sheet and refrigerate till they are frozen, after which you can transfer them to a freezer bag. Similarly, you can freeze a sealed container.
