The Minced Fish Soup with Vegetables

The minced fish soup with vegetables is a delicious soup in Anhui.

How To Make The Minced Fish Soup with Vegetables

Step 1

Wash chicken chest meat, cook and slice;

Step 2

Wash the onion and ginger, use the meat grinder to mince them, use the gauze to pass the onion and ginger water, put it into the pot and boil it, use the small leaky spoon to take out the minced mushroom, which is the onion and ginger juice;

Step 3

Wash the tomatoes, use the meat grinder to grind them, use the gauze to pass the tomato water, put it into the pot and boil it, use a small spoon to pull out the chopped mushrooms, which will become tomato juice;

Step 4

Pick and wash the spinach, and make spinach juice according to the method of tomato juice;

Step 5

Cut the mandarin fish and fat meat and soak them until they turn white. Wash out the blood water

Step 6

Take the meat out, drain it, chop it into mud and put it in a big bowl, add 3 grams of salt, MSG, rice wine, onion and ginger juice, pepper and 50g of the egg white, mix them evenly, and then add dry starch to make the filling;

Step 7

Divide the minced fish into 4 parts, add the tomato juice, egg yolk, spinach juice and egg white respectively, mix them into red, yellow, green and white minced fish, and pour them into the casings for sealing;

Step 8

Put the filled intestines into a cold water pot and cook until they are six ripe, then remove and cool them;

Step 9

Cut 1 knife every 0.2cm, 5 knives continuously, the first 4 knives are 4 / 5 deep, and the fifth knife is cut off;

Step 10

After cutting, put it back into the original soup pot and heat it. When the casing shrinks to plum blossom shape, the pot leaves the fire;

Step 11

Pour 750ml chicken soup into the pot, add the cooked chicken slices, cooked ham slices, winter bamboo shoots slices, mushrooms and refined salt to boil, remove and put into the soup bowl;

Step 12

Then hang the chicken soup with clear blood water and pour it into the soup bowl. Quickly remove the minced plum fish and put it into the soup bowl.
