The scalded sea shrimps is a traditional dish of Guangdong Province, belonging to the Cantonese cuisine. There is no seasoning in the production, and the shrimp is original. Burning is to put materials into boiling soup or boiling water to cook. No juice, no fluorescence, mainly to maintain the original taste of the material. The burning time must be short, the fire must be fierce, and the materials must be fresh.

If only boiled water is used in the process, the fishy smell of shrimp will remain. Add ginger, scallion and wine for blanching, then the fishy smell can be exhausted.
