The Braised Abalone and Fin

The braised abalone and fin is a famous dish in Fujian.

How To Make The Braised Abalone and Fin

Step 1

Peel off the abalone shell, take out the abalone meat, score crosswise twice, put the shark’s fin into the boiling water pot and blanch it thoroughly.

Step 2

Put the chicken soup in the pot, add cooking wine, onion and ginger juice, soy sauce, and bring to a boil over high heat, then add abalone meat. After boiling, use low heat to simmer until it is medium well , then add shark fin, salt and sugar, and continue to simmer over low heat until it is cooked and rotten.

Step 3

Collect the thick soup, add MSG, thicken with wet starch, take out the shark’s fin and put it in eight plates, take out the abalone meat and put it around the shark’s fin.
