How to Make Squid Balls
Step 1
Remove the head and internal organs of the squid and wash it clean with running water. Then cut it with a knife in the middle of the back, tear off the coat, and rinse it again. If we don’t remove the outer coat of the squid, the color of the squid balls will be darkened and not as pretty as the pure white color. And it would have a little bitter flavor when we eat it.
Step 2
Cut the cleaned squid into small pieces. And get one egg. Separate the egg whites from the yolks. We only use egg whites here. Pour the egg whites and squid pieces into an electric food chopper and stir into the squid puree.
Step 3
Then add 10 grams of starch to the squid puree, and continue to stir evenly. This way the squid puree is molded and will be more elastic! If you want the squid balls themselves to have a bit of taste, at this point you can also add a proper amount of salt, pepper, and a small amount of soy sauce in addition to the starch.
Step 4
Prepare a pot of water and turn on the heat until small bubbles appear, then we can turn off the heat! The temperature at this point is between 70-80℃. I usually make the meatballs at this temperature! If you use boiling water to make the squid balls, they will easily fall apart and will not mold easily. And then we also need a spoon for the meatballs. The spoon needs to be scalded in hot water first to prevent the squid puree from sticking.
Step 5
Hold the squid puree in your left hand and squeeze it out between the thumb and forefinger of your left hand. This way a meatball shape comes out. Take the spoon in the right hand, and use the spoon to scrape the meatball into the pot. The meatballs will sink to the bottom just after being put in the pot. The surface of the meatballs will slowly solidify and mold under the stimulation of the water temperature. After finishing squeezing the meatballs, turn to low heat and cook the meatballs, wait for all of them to float for 1 minute, and then turn off the heat, don’t take out the meatballs immediately after turning off the heat. Wait until the water is cool down and then fish out the squid balls so that they will be elastic.
Step 6
It is recommended that you guys eat 2-3 of them per day. You can freeze it if you make more at one time! I used a fresh-keeping box to freeze the cooked meatballs, and I added some cold boiling water inside so that they were not easily dehydrated. The taste will not change much from what is currently done. You can also put it in a fresh-keeping bag and freeze it. The squid balls can be stored in the refrigerator for 2-3 days. For longer storage, you can keep the squid balls frozen, and they can be kept for 1-2 months in the frozen state.
