How To Make Chinese Pig Head Recipe

Step 1: Prepare Pig Head

Firstly, we should wash the pig head. We use 1 kg pig head meat for this recipe. When we buy it from the market, it has some pig hair not cleaned up. We can ask the salesperson to use the small fire to burn it. Then carefully scrape the pig head with a knife. Then we should use the water to wash it. Then cut it into small pieces. Then save it for later.

Second, we should prepare 6 slices of ginger for this recipe. Then save them for later.

Next, we should blanch the pig head. Firstly, add 3 slices of ginger, pig head into the pan. Add enough water to immerse them. Then add 1 tablespoon cooking wine into the pan. Use the big fire to boil them. After the water has boiled, blanch the pig head for 3 minutes. We should scum the bubble when the water is boiling. Then use water to wash it. Then drain and save it for later.

Next, we should prepare the mixed spices bag. Add 3 slices of ginger, 5 bay leaves, 10g dry red pepper, 5g Chinese cinnamon, 5g star anise, 5g Sichuan peppercorns into the bag. Then save them for later.

Step 5: Braise Pig Head

Now we can start to braise pig head. Put the pig head, mixed spices bag into the pan. Then add enough water to immerse it. Then add 1 tablespoon sugar, 1 tablespoon salt, 1 tablespoon cooking wine, 1 tablespoon thirteen-spices, 2 tablespoons light soy sauce, 4 tablespoons dark soy sauce into the pan. Stir them evenly. Cover the lid and use the big fire to boil them. After the water has boiled, use the small fire to cook it for 40 minutes. We should stir them from time to time to make the pig head absorb the sauce enough.

After that, prepare some ingredients for this food. We need to prepare 2 cloves of garlic for this food. Then finely minced and save them for later. Then cut 250g green peppers into small pieces and save them for later.

After that, add 1 teaspoon peanut oil into the pan. Use big fire to heat it. Then add some garlic into the pan. Stir fry until fragrant.
