First of all, let’s talk about the status of staple food in our lives. The staple food is the main source of daily energy required by the human body as the name suggests. So in the matter of eating noodles, the temperament of the North and the South of China is completely different. Although there are many differences in the homemade noodles.

In China, noodles are a staple in the North, but they are a snack in the South. Northern noodles (eg shandong noodles) generally use winter wheat which has a long growth cycle, high starch and protein content, and high gluten. So the people in the North are concerned about the various processes of making noodles, including noodles and molding. The beginning of North homemade noodles is kneading dough. Because of different noodles have different knead dough methods, such as knife, pulling, pulling, hand-rolling, and then cutting, etc.

South noodles (eg guilin rice noodles) always use spring wheat which is starch, protein, and low gluten. Of course, there needs more knead dough skills to make noodles. In the high temperatures area, there are mostly alkaline water surfaces with edible alkali. One reason is to neutralize the acidity of the hair of the noodles, and the second is to improve the gluten. Otherwise, the taste is too bad, the noodles molding most of the fine noodles.

Step2

To make dough for baking, we usually start by putting some flour on a big dish, and then add water to it. Next, we knead the mixture with our hands to form it into dough.

Step3

Sprinkle some flour on a dish, then take out the dough and put the dough on top of the flour so that the dough doesn’t stick to the dish. We’re gonna cut the dough in half with a knife. Then add some hand powder and knead the dough until it becomes a little stiff.

Step4

Take out the rolling pin, put it on the dough.  And roll it out until it’s flat. Then cover the surface with flour.

Step5

There you should have a pasta maker machine at home. But if not, you can use a knife and cut the noodles into the width you like. I have a noodle machine, so I put the dough in the noodle machine and I make the noodles as wide as I like.

Step6

After making the noodles the width you like, you can also make the noodles the shape you like. If not, it is also OK to go this way.

Step7

After pressing the noodles into the way you like, the noodles are done. but the our favorite noodles can’t be eaten now. We’re gonna use it to make a delicious noodles recipe next.

Step8

Let’s take the pot out, add enough water into the poat. Then use high heat to boil the water. If the water is boil, put the noodles in and cook the noodles. By the way, many people do not put salt when cooking the noodles. That way, the noodles are not very delicious, so, when cooking the noodles, you need to put some salt. Adding salt not only tastes good, but also prevents the noodles from sticking to the bottom of the pan.

Step9

Then put the lid on the pot, let the noodles cook for a while. It always need cooke it for ten minutes. When the noodles are done, take it out. Put it in the cold water. You can use some ice with cold water. It can help the noodles taste stronger.

Step10

Leave it frozen for about ten minutes and drain it. Take the noodles out and put them in a clean bowl with your favorite sauce. Personally, I prefer hot sauce because hot peppers are really exciting to taste buds. You can add your favorite ingredients to stir. Then you get the delicious noodles at home.
