Ingredients

  1. 8 eggs, large
  2. 1/3 medium sized yellow onion, finely chopped
  3. ¼ cup green peas, fresh
  4. ¼ cup bean sprouts, cut in half
  5. ¾ cup green bell pepper, finely chopped
  6. 1 ½ tablespoon of light soy sauce
  7. 3 tablespoons of divided sesame oil

Directions for Preparation

Add eggs, bell pepper, sprouts, soy sauce, mushrooms, yellow onions, and light soy sauce in a bowl. Whisk the contents of the bowl till they mix properly, and set aside.

  1. Heat one teaspoon of sesame oil in a large skillet, placed on a stove set to medium heat settings.
  2. Add 1/3 of the contents in the bowl to the skillet and spread evenly. Allow it to cook for 3-4 minutes on the first side. Flip it for the other side to cook as well. The other side should take another minute or two to be ready.
  3. Repeat steps 2, and 3 until all the egg mixture is cooked.

Instruction

Add all the contents in the recipe in a small sauce pan. Whisk the content, and place it on a stove set to medium heat settings. Cook and whisk until the contents thicken.

The vegetables indicated in the recipe are just a guide on what you should have. In the unlikely event that you do not have one or two, you can still proceed with the recipe as instructed. That should not be a cause of alarm. Additionally, you can experiment with the vegetables that are locally available near your place of residence. You might surprise yourself and everyone with the new discovery.

In any recipe that involves mushrooms, it is always advisable to ensure that you wash them properly, especially if they are straight from the farm. The last thing you ever want in your dish is having to chew through sand or soil particles. After you have washed, wipe excess water with a damp cloth before slicing to bite sized pieces.
