Thanks to my friend Jie, he gave me for a packet of deep-sea organic baby kelp. The meat is very thick and is said to be the best kelp. I immediately want to use it to make braised kelp with pork which is one of my favorite braised kelp dish. My braised meat method is simple, without stir-frying sugar, bright red in color, rich in aroma, and healthier than the ordinary method. This is already my specialty. Every time I make it, even my mother who is a veteran kitchen expert also compliments me. I never eat fat meat except for the braised meat I make myself. Today I want to share the method to you.

The kelp dish smells good! Especially fat meat, not greasy at all, fragrant, melted in the mouth, soft and waxy, I could not help but eat 3 chunks, too delicious, I could not help! My kelp is quite thick, so it will simmer for half an hour. Just right, waxy, very tasty, and not fishy at all. Mom said, with a Shanghai belt, braised meat seems to be better, haha! It’s so delicious. If I can, I’d like everyone to try my braised kelp with pork recipe at home. I’m sure you’ll like it. If you like more braised Chinese food, you can try our braised pork ribs recipe.

You know the role of kelp in the recipe, and Do you want to follow me to make braised pork with kelp? If you want to, just follow my steps. Firstly, we need go to the supermarket to buy pork belly, kelp, scallions, ginger, 1 star anise, 1 bay leaves and 1 cinnamon to prepare the ingredients. With these ingredients ready, we can start to cook them.

Step 1

First of all, we have to roast the back of the pork belly with fire, because usually the back of the pork belly bought in the market is hairy, and not so clean, and it will be much cleaner with fire. Add a basin of cold water, put the pork belly in, drop in a few drops of wine to fish, let sit for a while, remove, cut, and set aside.

Step 2

We are going to add enough cold water to the prepared pot, put in the pork belly. Start to heat pork slowly, until the foam comes out. Then skim off the foam from the meat. This step is to remove odorous blood foam from the muscles.

Step 3

And then we’re going to take out a casserole and to dry cook it without oil. Put the pork belly on, fry it with low heat. Then press it with a spatula which can squeeze the fat out of the pork belly. My casserole is different from ordinary casseroles. It can be dry-cooked at 800 degrees and stir-fried directly. If you use ordinary casserole to stew meat, this step can be done in your work.

Step 4

Put 1 teaspoon of salt into the pot. Then fry the moisture of the meat itself until the meat is fragrant. Then turn on the heat to fry the excess oil of the meat. Fry it until both sides are golden. Then pour out the excess oil, and then you can use it.

Step 5

At this time, we add the prepared 2 piece of ginger and 1 teaspoon of light soy sauce, 1 teaspoon of dark soy sauce and 1 teaspoon of rock sugar to the pot, and then open fire and stir a few times.

Step 6

Then go and get a bottle of rice wine, add 1 tablespoon of rice wine into the pot. And pour the right amount of water which can immerse the ingredients. Put 1 green onionin the pot, cover it. And then turn on the high heat. After the water boils, it means that half of the success. At this point, we bring it back to a simmer.

Step 7

Take out the deep-sea organic kelp, put it in the basin. Add a pot of boiling water to soak for half an hour.  Then put the kelp on the cutting board, brush it with the brush. Just remember to brush on both sides and rub with salt for a minute or so. After then, the kelp is cleaned. Then usen knife to slice it.

Step 8

Put the kelp in the pot, boil it in boiling water to blanch it.  After boiled, take the  kelp outside the water. And wash it again with water. Set aside.

Step 9

At this time, the pork belly is also stewed for about half an hour. You can put the kelp into the pot to stew together. By the way, before putting the kelp, it is best to put some fragrant leaves, and cinnamon, for seasoning. Continue to simmer for half an hour. After half an hour, turn up the heat and reduce the juice. Taste it. I didn’t add salt. It’s just right. In a bowl, the delicious braised pork with kelp is finished.
