Our bamboo fungus recipe uses bamboo fungus and pork bone to cook bamboo fungus soup (竹荪排骨汤). It is a nutritious soup that has the functions of lowering blood pressure, lowering blood lipids, tonifying qi and moistening the lung.

Bamboo fungus (also called bamboo pith, phallus indusiatus,  Chinese name is 竹荪) is a traditional Chinese medicine that also is used to treat lung deficiency, hot cough, laryngitis, dysentery, leucorrhea, hypertension, hyperlipidaemia. But it also can be used to cook nutritious food. That is why we use it to cook this soup today. In general, we use dried bamboo fungus to cook dishes.

How To Make Bamboo Fungus Pork Bone Soup

Step 1: Wash Pork Bone

Firstly, we should wash 300g pork bone for this soup. More pork bone can add more thick taste to the soup. If you buy it from the market, you can ask the salesperson to help you chop the pork bone. Because it needs a special cutter to chop it.

Step 2: Prepare Ingredients

Now we should prepare some ingredients for this soup. Firstly, we need to prepare 6 slices of ginger for this soup. Then save them for later. After that, cut 1 bunch of green onion into small pieces. Then save them for later.

Step 3: Blanch Pork Bone

Next, we should blanch pork bone. Firstly, add some cold water, 3 slices of ginger, pork bone into the pan. Use the big fire to heat it. After the water has boiled, cook pork bone to turn white. After that, drain and save them for later. After blanching, we use the pork bone for bamboo fungus recipe that does not have many meat smells and will be more delicious.

Step 4: Cook Bamboo Fungus Soup

Now we can cook this soup. Add pork bone, 3 slices of ginger, 1/8 teaspoon cook wine, 800 ml water into the rice cooker. If you want more soup to eat, you can add more water.Use the big fire to heat it. After the water has boiled, use a soft fire to cook it for 1 and half hours.

Step 5: Wash Bamboo Fungus

When the soup is cooking, we should wash 10g bamboo fungus for this soup. Firstly, we should cut the head and bottom of bamboo fungus. Those things have a strange taste that we don’t like. Then we should cut them into small pieces. Then add 1/4 teaspoon salt and warm water into the bowl. Immerse them for 10 minutes. After 10 minutes, drain the bamboo fungus and use the cold water to wash it again. Then drain and save them for later.

Step 6: Add Bamboo Fungus

After 1 and half hours, add the bamboo fungus into the soup. Then continue to cook it for half-hour. After half hour, add 1/2 teaspoon salt, 1/4 teaspoon white pepper into the soup.
