How To Make Braised Pig Ears

Step 1: Wash Pig Ear

Firstly, we should wash the pig ear. We use 1 pig ear for this snack. When we buy it from the market, it has some pig hair not cleaned up. We can ask the salesperson to use the small fire to burn it. Then carefully scrape the pig ear with a knife. If you don’t like the pork head meat close to the pig ear, you can remove them. But we think it is also a delicious part of the pig. After that, add 1 tablespoon salt to scrub the pig ear. Then we should use the water to wash it. Then save it for later.

Step 2: Prepare Ginger

Second, we should prepare 6 slices of ginger for this snack. Then save them for later.

Next, we should blanch the pig ear. Firstly, add 3 slices of ginger, pig ear into the pan. Add enough water to immerse them. Use the big fire to boil them. After the water has boiled, blanch pig ear for 3 minutes. Then drain and save it for later.

Next, we should prepare the mixed spices bag. Add 3 slices of ginger, 5 bay leaves, 10g dry red pepper, 5g Chinese cinnamon, 5g star anise, 5g Sichuan peppercorns into the bag. Then save them for later.

Step 5: Cook Braised Pig Ears

Now we can start to cook braised pig ears. Put the pig ear into the pan. Then add enough water to immerse it. Then add mixed spices bag, 1 tablespoon sugar, 1 tablespoon cooking wine, 1 tablespoon salt, 1 tablespoon thirteen-spices, 1 tablespoon light soy sauce, 1/2 tablespoons dark soy sauce into the pan. Stir them evenly. Cover the lid and use the big fire to boil them. After the water has boiled, use the small fire to cook it for 40 minutes.

We should stir them from time to time to make the pig ear absorb the sauce enough. After 40 minutes, turn off the heat and simmer it for half an hour. Then we got the delicious pig ear.

But if you like a richer flavor of braised pig ear, you can use it to do Chinese pig ear salad. Firstly, cut the pig ear into smaller pieces. After that, prepare some ingredients for this salad. We need to prepare 2 cloves of garlic for this food. Then finely minced and save them for later. After that, finely minced 2 chili peppers, save them for later. Then cut 1 bunch of parsley into small pieces and save them for later. After that, cut 1 bunch of green onion into small pieces and save them for later. Then add pig ear, garlic, chili peppers, green onion, parsley, 1/4 teaspoon salt, 1/4 teaspoon chicken powder, 1/2 teaspoon mature vinegar, 1 teaspoon light soy sauce, 1 teaspoon sesame oil into the pot.
