Step 1: Prepare Chicken Drumsticks

Firstly, we should prepare 3 chicken drumsticks. Use a knife to make an opening at the bone joint. Then use the the knife to swipe down again. Then turn the meat out along the bone to make a chicken lollipop. We use the big drumstick to make the chicken lollipop. If you buy a smaller one, you can also use it. We think the smaller ones will taste better than the big ones. Then save them for later.

Next, we should marinate chicken drumsticks. Firstly, put chicken drumsticks into the pot. Then add 1/2 tablespoon cooking wine, 1 tablespoon oyster sauce, 1/2 tablespoon black pepper powder into the pot. Stir them evenly. Then marinate them for 2 hours.

Step 3: Prepare Egg Mixture

While marinating chicken drumsticks, we should prepare egg mixture. Beat 4 eggs into a bowl. Then stir the egg mixture well until they are frothy. Then save it for later.

After 2 hours, we should prepare frying. Coat drumstick with dry starch. Then shake off the excess. Then coat drumstick with egg mixture and breadcrumbs. Then save it for later.

Now, we can start to fry lollipop chicken drumsticks. Firstly, add enough sunflower oil into the pan. Make sure the oil can immerse the drumsticks later. Use big fire to heat the oil. When the chopsticks are put in, small bubbles pop out evenly and quickly which means the oil is hot enough. Then transfer to medium heat and put the drumsticks into the pan.

If the pan doesn’t have enough space to hold all of the drumsticks, we can fry them in batches. It will take about 10 minutes to fry. After the drumsticks are fried to golden yellow, drain them out of the oil. After that, heat the oil to the same temperature before and put the drumsticks into the pan to deep fry for 1 minute.
