In my memory, parents would prepare their own New Year goods, and now most of them buy it. I miss the New Year when I was a child. Only then did I have a strong New Year flavor. I saved some of the skins from the pork, and made pig skin jelly for my daughter.
How to make homemade pig skin jelly?
Step 1
Try to remove excess fat from pigskin.

Slice ginger and green onion.

Put the pork skin into the pot, add green onion, ginger and cooking wine, add water to boil, and cook for ten minutes. If it is thick pig skin, increase the cooking time appropriately.

Take it out and soak in a hot water basin.

Pull out separately, and pluck out pig hair.

Use a knife to scrape off the white fat on the pigskin. This step is the most critical, otherwise it will be very fishy. You can repeat the scraping several times, and change the hot water again. I have scraped five times.

This is the last time of scraping while soaking. The pigskin doesn’t feel sticky to the touch and the water is clear.

Take out for later use.

Cut into small strips.

Put the cut pork skin strips into the pot, add three times the amount of water, and boil it on low heat for an hour.

Until the soup is a bit sticky, it will be more sticky after dipping it with your fingers, or scoop out a small dish on the window to see if it solidifies.

Pour into a container and let it cool naturally. I have to use a pot.

The next day, take it out to eat and save it in the refrigerator.
