Our Chinese steamed chicken with cordyceps flower recipe (虫草花鸡汤) is a very easy Chinese recipe for you if you like to eat chicken.  Maybe most of you will confuse about the cordyceps flower.  Cordyceps flower (Chinese name is 虫草花 Chong Cao Hua or 北虫草 Bei Chong Cao) belongs to fungi phylum, ascomycetes, hypocreales, ergot family, cordyceps genus.  It grows mainly in the northern part of China. But a lot of people mistakenly think that cordyceps flower is caterpillar fungus (also called ophiocordyceps sinensis, cordyceps sinensis, Chinese name is 冬虫夏草). The two have an essential difference.

Caterpillar fungus is an extremely rare wild Chinese medicine and is much more expensive than cordyceps flower.

Cordyceps flower have no insect body but only have orange grass. But its effects are similar to caterpillar fungus.  Its effects include nourishing lung kidney and liver, nourishing Yin and Yan(traditional Chinese medicine (TCM) terminology), and improve immunity, etc. Cordyceps flowers are commonly used for soup or steamed dishes and taste extremely delicious. You can use fresh cordyceps flowers or dry cordyceps flowers for this recipe. It doesn’t have a big difference when you cook it.

In addition, we also use Dang Shen (also called codonopsis root and Chinese name is 党参 dang shen) and red dates for this recipe. Dang Shen can enhance immunity, dilate blood vessels, reduce blood pressure, improve microcirculation, enhance hematopoietic function, and so on. Red dates have the effect of nourishing the stomach, invigorating the spleen, benefiting the blood, nourishing and strengthening the body.

When we choose the chicken for this recipe, we should choose the tender chicken. We just need to steam the chicken for 15 minutes. If we use the old chicken, the chicken is hard to cook and will not become tender after being steamed. The old chicken is good for cooking soup but not good for this recipe.

How To Make Chinese Steamed Chicken With Cordyceps Flower

Step 1: Immerse Cordyceps Flower And Dang Shen

Firstly, we should immerse cordyceps flower and dang shen. We use 10g dry cordyceps flower and 10g dang shen for this food. We need to immerse them for 10 minutes. Then drain and save them for later. If we use the fresh cordyceps flower, we don’t need to immerse it.

Step 2: Prepare Ingredients

Next, we should prepare some ingredients. Firstly, shred 3 slices of ginger, save them for later. Second, cut 2 red dates and denucleate. Then cut them into small pieces and save them for later. Finely mince 1 bunch of green onions, save it for later.

It has a big difference between red dates and denucleated red dates. Relatively speaking, the nuclear of red date is rich in quantity of heat but also contains a variety of mineral elements such as calcium, iron, phosphorus, and other mineral elements that can tonify qi andengender blood. If female patients eat it long-term that can detox well and be conducive to the maintenance of liver function. But it is easy to be lit. the denucleated red dates can achieve the effect of quench thirst and reduce internal heat.

Now we should wash and cut the chicken. We use 500g chicken for this food. After washing it, cut it into small pieces. Please don’t cut it into big pieces that will make the chicken hard to cook. Then save it for later.

Step 4: Marinate Chicken

Next, we should marinate chicken. Add 1 teaspoon salt, 1/2 tablespoon corn starch, 1/2 teaspoon light soy sauce into the chicken. Then add cordyceps flower, dang shen, red dates, ginger into the chicken. Stir them evenly. It can help the chicken to absorb the ingredients’ taste. Then marinate them for half-hour. Marinate it for a long time can help the chicken to absorb the sauce enough.

If you want the make sure the chicken absorbs the sauce adequately,  you can cover it with plastic wrap and put it into the refrigerator to store. The longer you store it, the better taste it gets. But we think the half hour is enough if you want to do that. You can adjust the taste according to your flavor.

Step 5: Steam Chicken

After half hour, we can steam the chicken. Firstly, add 1 teaspoon peanut oil to the chicken. Stir them evenly and save them for later. Second, add some water into the pan and use a big fire to heat it. After the water boiled, put the steamer into the pan and then put the chicken on the steamer. Use big fire to cook it for 15 minutes.

After 15 minutes, sprinkle with green onions. Then we got the delicious Chinese steamed chicken. The chicken is so fresh and tender that we don’t need to cook it for a long time. It also has the scent of cordyceps flower. Please don’t cook it a long time that will make the chicken older and hard to eat. 10-15 minutes are the best temporal interval. You can taste a piece of chicken to determine if it needs more time to steam the chicken.
