How To Make Braised Duck Feet
Step 1: Wash Duck Feet
Firstly, we should wash the duck feet. We use 500g duck feet for this food. The duck feet will have something not cleaned up when we buy it. So we need to wash them carefully. We can wash them few times for cleaning. Then save them for later.
Step 2: Remove The Toenails Of Duck Feet
Second, we should remove the toenails of duck feet. Compress the duck feet and then cut the 3 long toenails of duck feet. Then turn the duck feet and cut the short toenail.
Step 3: Prepare Ingredients
Next, we should prepare some ingredients. Firstly, we need to prepare 4 slices of ginger for this food. Then shred 2 slices of ginger, save them for later. It has much use in the next steps. Then finely mince 2 cloves of garlic, save them for later. Cut 5 dry red pepper into small pieces. Then save them for later.
Step 4: Blanch Duck Feet
Next, we should blanch duck feet. Firstly, add some water and 2 slices of ginger into the pan. Use the big fire to heat it. After the water has boiled, add duck feet into the pan to blanch. When the duck feet turn white, drain and save them for later.
Step 5: Cook Braised Duck Feet
Now we can cook braised duck feet. Add 2 tablespoons of corn oil into the pan. Use the big fire to heat it. Then add shredded ginger, minced garlic, dry red peppers into the pan. Stir and fry them until fragrant. Then add 2 star anise, 5 bay leaves, 2g Sichuan peppercorns, 3g licorice root, 3g Chinese cinnamon, 3g fennel into the pan. Stir and fry them until fragrant. Then pour the duck feet into the pan. Stir them evenly. Then add 1 tablespoon light soy sauce, 1 tablespoon dark soy sauce, 1 tablespoon oyster sauce into the pan. Stir them evenly. Then add 1500ml water into the pan. Use the big fire to heat them. After the water is boiled, then add 1/4 teaspoon chicken powder, 1/2 teaspoon sugar, 1 teaspoon cooking wine, 1 teaspoon sesame oil into the pan. Stir them evenly and then cover the lid to braise the duck feet. Use the medium heat to cook it for 50 minutes. We should stir them from time to time to make the duck feet to absorb the sauce enough.
After 50 minutes, open the lid and use the big fire to cook it for 10 minutes. It can help the duck feet add flavor from the sauce. After 10 minutes, we got the delicious braised duck feet.
