According to one Chinese proverb, cheap ingredients are often delicious. Chicken head is one of the them. There are very few edible things in chicken heads, especially the chicken brain which contains high cholesterol, so people usually avoid eating chicken heads, and some of them discard it as scraps. At that time, we could only buy a chicken with a ticket during the Chinese New Year. Because we buy anything need the ticket in China. When the family was a large one, we had to put some cabbage in the chicken to make it a good meal. I just remember it being such a big annual dish that my mom barely ate the chicken and just put the leftover chicken heads, claws and bones, and such into her bowl to taste. When we asked her about it, she said she would like to eat chicken heads, they taste good.
When the conditions gradually got better and we grew up, when we were mentioning chicken heads, my mom said something like, “Sweety, who eats chicken heads when there’s enough chicken to serve? When I think of this conversation, I get a sinking feeling in my heart. The other day I happened to see a separate seller of chicken heads, which made me think again about what my mom said, so I bought a bag of chicken heads and made this braised chicken head. We also have more braised style Chinese recipes, our braise duck head style is another wonderful Chinese dish.
