The Fat Pig Intestine Soup with Peas

The fat pig intestine soup with peas is a cheap snack in a small roadside restaurant in Sichuan Province. It can’t be served on a large table, but it’s the real taste in the most ordinary life. It’s so simple that it can be served for ten yuan.

How To Make The Fat Pig Intestine Soup with Peas

Step 1

Soak the dried peas with warm water one day in advance, slice the ginger, and chop the scallions after washing

Step 2

Turn the fat intestines out, pull off the dirt and excess fat oil, put them into the container, sprinkle 1 teaspoon salt, rub and wash them, then wash them with water, put the cleaned fat intestines into boiling water, blanch and scald them for half a minute until they are slightly compressed, then take them out, after the fat intestines are cooled, cut them into small sections with a width about 2cm

Step 3

Heat up a little oil in the pot, then stir fry the ginger slices, pour in the fat intestines , stir fry, and mix in the cooking wine and white pepper

Step 4

Pour the fat intestines into the soup pot and pour it into boiling water for 1.5L. After the water is boiled, pour the peas into the boiling water. After boiling, sprinkle with baking soda, cover the pot and cook in medium heat for 2 hours until the pea is rotten. Finally, add a little salt and MSG. Sprinkle with chopped scallion before eating.
