In the cold winter, there is a vegetable that is also popular, it is the sweet potato.  Maybe some area of US called it yam. You can see vendors selling roasted sweet potatoes everywhere in the streets and alleys in winter. In addition to roasting sweet potatoes, they can also be made into dried sweet potatoes. It is very enjoyable to eat this thing in your free time or during catching up on a series.  Especially in the Chinese New Year, it is one of the best thing to serve our friend.

Most of my friends like to eat it. And I believe some of them have tried to make it themselves. Because it is bought from the supermarket just look better from the appearance, but the taste is far less delicious than the ones we make at home.

Have you met such problems as others during the dried potatoes process? The drying time is short, the sweet potatoes have a smooth taste, and the drying time is too long, it will become dry and hard, without the soft and tough taste, it is not delicious. In fact, it is not difficult to make sweet potatoes dry and tough, as long as you master a skill, you can easily make soft and flexible dried sweet potatoes. There are many things that can eat with this thing. I recommend you choose our  wonderful lemon tea as your drink.

Do you need to cook sweet potato before dehydrating?

Of course. Sweet potatoes need to be cooked or baked first, then cut into slices or pieces, and finally dried in the sun or a ventilated place. Doing so can keep the original nutrients of sweet potatoes and also improve the taste and flavor of sweet potatoes.

How long does it take sweet potatoes to dry?

It’s hard to tell you an exact time. Because the time that sweet potatoes need to be dried depends on factors such as their size, shape, and humidity. Generally, baked sweet potato cubes can be dried in a few hours by placing them on paper towels. During drying, sweet potato blocks need to avoid excessive wind to avoid spoilage or rotting. If the surface of sweet potatoes shows water beads or dampness, you need to replace the paper towels in time or dry them for a longer time.

How To Make Chinese Dried Sweet Potato

Step 1

Wash the sweet potatoes (it is best to buy red heart sweet potatoes, it is not recommended to choose white heart,because white heart sweet potato haa rougher flesh and a hard texture, the taste is not good after drying)

Wash the sweet potatoes in a steamer and steam them over high heat.

Step 3

Steam for about 25 to 30 minutes. In the process of steaming sweet potatoes, you can pierce them with chopsticks to see if they are already cooked, and if the chopsticks can easily penetrate them, it means they are already steamed. Be careful not to steam for too long, just steamed through, so that the sweet potatoes won’t be too dry or mushy.

Peel off the skin of the steamed sweet potatoes and cut them into thick slices (It is not recommended to cut the sweet potatoes too thin. If they are cut into too small pieces, they are prone to deformation and spoilage during the drying process. And it will also affect the quality and taste of yam. So I cut directly into thick triangular slices, when I was a child, I watched my grandmother dry sweet potatoes, which were cut like this.

Put the thickly sliced sweet potatoes in the sun to dry. If there is no more sun, take them back inside.

After four days of drying, the sweet potatoes are quite dry. (The temperature here is about 8-9 degrees during the day and they has been dry for four days).

Step 7

Then put the chinese dried yam into a steamer and steam them over high heat for about 10 minutes.

Leave the steamed sweet potatoes in the air for another day and the skins will be dry. At this point, you can collect the sweet potatoes and put them in a clean and sealable plastic bag. The  sweet potatoes are done. Isn’t it quite simple? When they are soft, take them whenever you want to eat them. The dried yam at this point are guaranteed to taste much better than the dry ones, they are soft and chewy at the same time.

Tips:

1. When choosing sweet potatoes we have to choose those with a large shape, smooth surface, and free from damage and pests. Choose sweet potatoes with high maturity as much as possible so that we can ensure the taste and quality. And it is best to choose sweet potatoes of the same size so they can be cooked at the same time.

2. In the process of steaming, be sure to steam with high heat, and the sweet potato skin can be steamed half-cooked in a short period of time so that the sweet potato can taste sweet after steaming. Because the amylase enzyme in sweet potato at about 60℃ can promote the starch to turn into sugar quickly.

3. During the drying process, the sweet potatoes should be constantly turned to make sure the taste and quality. Dry until they are hard and not sticky.

4. When storing sweet potato fries, be sure to keep them in an airtight container and at room temperature so they won’t easily get damp and affect the taste or spoil quickly.
