Firstly, we should cut ribbon fish. We use 1 ribbon fish for this recipe. Tear off the fins from the side of fishtail. Then cut it into small pieces. Then use the chopstick to clean the viscera of ribbon fish. Then use water to wash it again and save for later.

After that, we should marinate ribbon fish. Firstly, add 1 tablespoon cooking wine, 1/2 tablespoon salt to marinate ribbon fish for 10 minutes. It can help the meat of ribbon fish absorb the taste. Cooking wine can help us remove the fishlike smell from the fish.

Step 4: Prepare The Braised Sauce

Next, we should prepare the braised sauce. Add 1 tablespoon cooking wine, 1/2 tablespoon dark soy sauce, 1/2 teaspoon seasoned soy sauce for seafood, 1/4 teaspoon sugar, 1/4 teaspoon chili sauce into the bowl. Stir them evenly. Then save them for later. We also can change the ratio of the sauce. It depends on your flavor.

Now we can start to braise ribbon fish. Add 2 tablespoons of peanut oil into the pan. Then add the ribbon fish into the pan. Use a small fire to fry it to golden yellow. Please don’t stir it quickly. If you are afraid that it sticks to the pan, you can shake the pan to prevent it. We should wait for one side to golden yellow then we start to stir it to another side. After that, add ginger, garlic segment into the pan. They can help us to remove the fishy flavor. Then add enough water to immerse the ribbon fish. Then add the braised sauce into the pan. Use the middle fire to heat it for 5 minutes.

After that, add garlic leaves, red pepper to beautify this food. Finally, add 1 teaspoon sesame oil into the pan to tart up.
