The Maltose Nougat

The first batch of nougat is made of marshmallow version. Some friends don’t like marshmallow version. If they want to make marshmallow version, they ask me how to make it. Because they are afraid of trouble and don’t like boiling sugar, they haven’t made it all the time. In order to live up to their friends’ expectations, they made a batch of maltose nougat at home during the weekend.

How To Make The Maltose Nougat

Put the egg white into the egg beating basin, and use the hair of the electric egg beater to make it hard to foam (the egg beater will not show a hook when lifting the egg beater.

Clear water, white sugar, maltose, salt, etc. are put in the non stick pot

Cook slowly with a small fire. Use chopsticks to stir continuously during the cooking process. Cook for about 20 minutes

Pour the boiling sugar into the whisked albumen basin, and whisk it quickly and evenly with the egg beater

Add butter, beat evenly with egg beater, add milk powder in several times, mix quickly and evenly

Pour the evenly mixed ingredients into the non stick square baking tray, press it flat, and place it for about 24 hours

Buckle the sugar upside down on the chopping board and cut it into long strips about 1cm wide with a knife
