How to Make Homemade Fried Stinky Tofu
Step 1
Cut the tofu into small cubes of 1 to 1.5 cm thick (don’t cut it too thin, it will be too dry after fried)

If the sliced tofu is too moist, it is best to lay it flat on a cutting board for a while.
Step 3
Take one container and place two pieces of stinky tofu.,which can be of any brand. I use the special stinky tofu of Northeast. Each piece in the box is individually vacuum-packed.
Step 4
Put 3 ~ 4 scoops of warm water in it, crush and stir into stinky tofu juice.
Step 5
Put the tofu cubes in a clean container. Pour the mixed stinky tofu juice into the tofu. I mixed the tofu pieces directly into the stinky tofu juice. But be sure to lighten it when mixing, don’t break the tofu pieces.
Step 6
Marinate the tofu pieces for 20 minutes before frying. The longer it is marinated, the stronger the flavor. Can be stored in a container with a sealed lid. Then marinate in the refrigerator. This will take longer to store.
Step 7
Before making the stinky tofu, make 15 grams of sesame sauce, 15 grams of garlic chili sauce, 1 tablespoon of chili oil, 15 grams of stinky tofu (boxed or bottled) in a bowl and crush. Mix well. If it’s too dry, stir in a moderate amount of warm water to make a thicker paste. Then put in chili oil and mix well to make a thin paste.
Step 8
Before deep-fried stinky tofu, the dipping sauce for deep-fried stinky tofu should also be made first: peel the fried (or roasted fried) peanuts and put them on the chopping board. Add cooked sesame seeds. Roll into a powder with a rolling pin together.
Step 9
Put the peanut and sesame powder in the plate, then add the cumin powder and paprika, and mix well.
Step 10
Put vegetable oil in a clean pot, heat it up (to the extent that there will be dense bubbles around the stinky tofu), and put the marinated stinky tofu in pieces. Fry over medium-low heat until both sides turn golden, remove when the shell is crisp, and drain the oil. Put less oil in the pan and fry it in several portions. The fried stinky tofu oil has a taste and cannot be used. If you put more oil, it will be wasted. Do not use the fried method, the fried stinky tofu will not be crispy and tender inside.
Step 11
Hold the fried stinky tofu with chopsticks while hot and skewer it onto 2 bamboo sticks. Then brush both sides with the previously prepared sauce (50 grams of fried peanuts, 20 grams of fried sesame, 8 grams of cumin powder, paprika. Decide how much you want according to your preferences); if you are at home, eat without bamboo sticks. Just fry it, put the dipping sauce on it one by one, and put it in the plate.
Step 12
Then dip the peanuts, sesame and cumin powder on both sides of the dipping pan and start eating.
