Fried prawns are a traditional dish in Zhejiang Province. Take Shaoxing inland river prawns and burst them with high heat. As I live on the seashore, I usually choose sea prawns, which taste very good. There are many ways to cook shrimp with oil, and my one is a relatively simple version.
