Prepare all the ingredients, including different kinds of mushrooms and one chicken leg.
Wash and shred the mushrooms and pleurotus eryngii. Let them soak in the water for a while. Chop shallots and parsley, and slice ginger.
Put the chicken legs in a boiling water pot and boil for 5 minutes. Put enough water in the casserole pot, add shallots, ginger, star anise, medlar and cooked chicken legs in and cook. When the water boils, simmer for 1 hour until the chicken legs are soft and rotten.
