How to make a dried fruit country cake?
First, separate the egg white yolk into two oil-free and water-free POTS.Add 30 grams of granulated sugar to the yolk.
Whip the egg yolks.
Add lemon juice to the egg white, add sugar in three times until stiff peaks form.
Spoon a third of the egg whites into the yolk mixture.Mix well.
Mix the egg white with the yolk.

Sift in 40g of low flour and 15g of fine corn flour (mix the two kinds of flour beforehand) and mix well.
Add in dried fruit and black sesame and mix well.
Pour batter into a baking pan and use a scratcher to stack the sides.
Mix together powdered sugar (7g) and flour (7g). Sprinkle over the top and use a spatula to draw the pattern.
Preheat oven to 150 degrees, medium for 25 minutes.
