How to make cold tofu shreds
Prepare the ingredients you need, and you can start making them. First cut the shredded tofu you bought into small pieces, as long as you like. I cut about 5cm in length. I think this length is the most suitable.
Now peel off the dry skin of the green onion, wash it, and cut it into small pieces of the same length as the tofu shreds. Then use a kitchen knife to cut it into two halves, and then cut into thin shreds along the lines of the green onion. It’s not very good, but try to cut it as finely as possible.
In addition to shredded green onion, coriander is also indispensable for this cold dish, otherwise the taste will not come out. Remove the yellow leaves from 3 coriander roots, clean them, and cut them into shorter pieces than shredded tofu.
Put the shredded tofu, chopped green onions, and coriander into a large clean bowl.
Tofu shreds have no taste. They need the flavor of the seasoning to be delicious, refreshing and natural. So we need to make a delicious sauce for shredded tofu, take a clean small bowl, add a little chicken essence, 2 tablespoons of warm water to the bowl, and stir until the chicken essence melts. Then add 2 spoons of light soy sauce, 3 spoons of balsamic vinegar, half a spoon of sugar, half a teaspoon of edible salt, a little bit of sesame oil, and mix well. The chicken essence does not dissolve until about 40 degrees, so we need to melt the chicken essence with a little warm water.
When the seasoning is done, it is even simpler. Pour it directly on the shredded tofu, green onion and shredded coriander, stir well with chopsticks, and start eating.
If you like spicy food, you can add some chili oil on it to make it more fragrant.
